The CIEH Level 2 Award in Food Safety in Catering is a legal requirement for anyone working in an environment where food and drink is prepared, cooked and served. This replaces the previously recognised Basic Food Hygiene course.
Course Content
- The laws that apply to food businesses and food handlers, descriptions of general terms, legal requirement and current legislation
- The concept of food hazards and equipment temperatures
- How to take product and equipment temperatures
- How a reduction in storage temperature will minimise bacterial multiplication
- The importance of cleaning in a food premises
- The need for high standards for structure and equipment to promote good hygiene in food premises
This Award is relevant for all catering operations such as pubs, hotels, restaurants, fast food outlets, outside caterers, hospitals, care homes and even armed forces.
Not only is this course a legal requirement for anyone working in catering, it acts as a basic understanding for the protection of the consumer health and well being by safeguarding food from anything that can cause harm.
The EHO’s and CIEH will recommend that the course is refreshed every three years. Whilst this is not a legal requirement, it is recommended. Alternatively, why not look at doing the next level up? Increase your level of knowledge and understanding, and be able to pass it on to other members of staff.

Qube can locate a venue near to your premises where we will facilitate the training day; this will include refreshments and lunch as well as a reference book for each delegate, examination and certification.

Option 2
You may have a suitable training room on your premises that you would prefer us to use, this option will include a reference book for each delegate, examination and certification.
